I've got a project in which I am trying to generate both a pie chart and bar graph in a high enough resolution to be reproducible in a book. Does anyone know of some software (preferably free) which might allow me to input the data and come out with a high res figure in the end?

I use CutePDF (freeware). I print Excel charts to CutePDF, then open the resulting pdf file in Gimp (also freeware). When you open a pdf in Gimp, it lets you set the resolution high enough for a book (I use 300 to 600 ppi, depending). Then you can save it as pretty much any graphics format and keep the resolution.
